THIS IS BY NO MEANS AN EXHAUSTIVE LIST. If you would like a profession NOT listed here, you can mention that on your application. As long as it's reasonable (something unreasonable would be like... an undefeatable ninja.) then it should be fine. The list can grow as needed.
Classes marked with a * are are limited and granted upon request. If you pick one of them, you must add a second and an admin will decide which you get.
Citizen
Banker: One who handles money. Usually trustworthy and works in the banking system. They are all over the place and are the one to talk to when you need a loan or funds. Most of the time they are fairly well-off themselves.
Blacksmith/Technician: Very good with their hands when it comes to the advanced steam technology. When you need a repair on just about anything, these are the people to see. Some are brilliant, why the others aren't the brightest bulb in the box, but they can fix just about anything you need fixed or made. They're good with making weapons and the like.
Doctor: Amazing medical knowledge and the person to see when you're injured or sick. Doctors are quite good with herbal remedies as well as modern medicines.
*Mercenary: A jack of all trades. They are a sword (or gun) for higher. They take any jobs they are offered (or feel like doing) and are quite skilled all around. They know the basics of herbal and medical remedies and specialize in their weapon of choice. Strong and smart, these people know what they are doing.
(Note: Don't God-mod as a mercenary. Not EVERYONE can have this class.)
Teacher/Scholar: Brilliant folk who can teach you just about anything you want to know. Book-smart, and sometimes very street-smart, these people are amazing. From history to mathematics, they have the knowledge.
Military
*Captain: A high-ranking officer in the military who knows what they are doing. They are good fighters, but give orders more often than join their fellows on the battle field. They are strategists, and know how to operate their fleets to win a battle.
Pilot: Not a fighter, but a flier. These folk know how to operate the machines they ride and are pretty good at basic fixes. From the sky or land, they can get you where you need to be and can usually operate the weapons on their ships.
Police Officer: Not quite in the military. The local police. If there is a crime, it is likely that you'll report it to one of these officers and they will find your man--detectives go under this category, too. They're good with guns and close combat, but not so much ranged combat or swords. Usually not the best pilots.
Soldier: A soldier in the military. Good with guns and trained with basic swords, like mercenaries, a soldier is a good fighter. They're good and protect the citizens of the land against the pirates.
Nobles
(Nobles sort of explain themselves, so there is only a list at the moment. If someone wishes to write summaries, you will be credited and thanked.)

Pirates
Bandit: Not always a member of a pirate ship. They are thieves and masters of deception. They can pick locks and break into homes without (usually) getting caught. Sly masters who can swipe your wallet without you knowing it before it's too late.
Crew Member: Crew members of a pirate ship. They usually excel in some form of knowledge (a specialty), be it weapons or mechanics, but you can't have a ship without them. They are almost like a lesser form of mercenary and very much like the "soldiers" of the pirates.
*Captain: Like a military captain, the ship captains are brilliant. They know what orders to give and when to give them to do what is best for their crew. They have a good idea of the land and have amazing maps in their mind. They know how to get what they want and will stop at nothing to acquire their treasure.
The Underground
The Underground works like a collection of Mafia families running the Black Market; these are the people who employ mercenaries and trade with pirates, but are not necessarily themselves mercenaries or pirates.
*Mafia Boss: One of the leaders of the "families" that run the Underground. They are very powerful and wealthy and have a lot of sway over the Black Market. These people are incredibly intelligent individuals who deal in all kinds of illegal activities.
Hitman: These people work for one specific family and their loyalty lies with the Boss of that family. They are the bodyguards of the important people in the Underground and the ones who take care of any... messes outsiders or even their own may cause.
Espionage: These are the politicians, lawyers, bankers, shopkeepers, etc who seem to be legit on the surface but are really just putting up a front for illegal activities.
Mafia Member: Just your ordinary part of the Underground. These people stay in the shadows and run the Black Market by their Boss' orders. Slave traders, drug dealers, etc.
